What the water will do, is it will preserve that tender bacon flavor we all regularly crave. The water will then slowly start to boil, at which this point you can turn down the heat from high to medium. The water is going to eventually evaporate, and once it does, you will then know that this is your cue.
As soon as the water completely depletes from the pan, turn down the heat some more to medium-low. Cook until your bacon strips are tender, and not too soggy, but also not too crispy. Then once you get to this point, take a paper towel and pat down the bacon to try and remove any excess grease.
