Chicken is a healthy protein option that pairs well with a variety of foods. It's something you can feel good about serving your family for dinner, but you'll want to make sure it's cooked properly. It can be incredibly tasty, or turn out dry - depending on how you prepare it.
Chicken breast is one of the more versatile proteins to cook with, but it can also be one of the trickiest to get just right.
Well gone are the days of dry, boring chicken dinners that make you wish that you had cooked anything else. Given that you follow this fantastic cooking method, your chicken will turn out perfect, every time. You can ensure you're cooking your chicken properly and keeping it as juicy as possible by following this simple brine recipe.
To make the tastiest chicken dinner, you'll need a few ingredients:
- 4 chicken breasts (with skin or bone)
- 6 cups water at room temperature
- 1/3 cup salt
- 1 small lemon
- Pinch Garlic powder
- Pinch of Thyme
- Pinch of Paprika
- Olive oil or melted butter
- Pinch of Salt & Pepper
First, heat your oven to 375 degrees. Mix the salt and water in a large mixing bowl, and stir until the salt dissolves completely. Add in the chicken breasts and cover with plastic wrap. Place the bowl in the refrigerator for at least 30 minutes. You can leave the bowl in the refrigerator for up to 12 hours, depending on how much time you have until dinner.
After the 30 minutes (or more, depending on how much time you have) is up, take the chicken out of the refrigerator and pat the meat dry. Place the chicken on a roasting rack, and let rest for 20 minutes at room temperature.
Next, squeeze the lemon juice on the breasts and add the garlic powder, thyme, paprika, salt, and black pepper. Then, drizzle the olive oil (or butter, your choice) lightly over the chicken.
Once your chicken is seasoned, place a tent of tin foil over the chicken, and pop the roasting rack in the oven for 20 minutes. After the 20 minutes is up, carefully remove the tin foil and cook for an additional 10 to 15 minutes, or until the chicken is cooked thoroughly. The chicken's temperature should be 155 degrees.
Once the chicken is done, remove it from the oven and let it rest for five minutes. The juices will run clear, and the chicken will be moist and delicious. All your work has paid off and the chicken is now ready to enjoy!

For the moistest chicken, be sure to purchase cuts that aren't boneless or skinless, as the chicken skin and bones help to lock in the moisture. This prevents the chicken from drying in the event that it's overcooked. This chicken recipe is a low maintenance way to achieve a delicious chicken dinner that your family will love.
