To make this old fashioned custard pie, you'll need one unbaked pie crust, three eggs, 3/4 cup white sugar, 1/4 teaspoon salt, 1 teaspoon vanilla extract, one egg white, 2 1/2 cups pasturized milk and 1/4 teaspoon ground nutmeg. Preheat the oven to 400 degrees, and begin by whisking the three eggs in a large bowl.
After the eggs are beaten, mix in the sugar, salt and vanilla extract. While you whisk constantly, slowly add the two cups of milk to the bowl. If you like a deeper color to your custard filling, mix in two to three drops of yellow food coloring to give it the desired effect.
Next, beat one egg white and brush it thoroughly over the unbaked pie crust. The egg white prevents the crust from becoming soggy. Remember to use a deep dish pie crust, as this custard will take up the majority of the pie space. Once the pie crust is prepared, place the pie crust on a baking sheet and pour the pie filling into the pie crust.
Sprinkle the top with the ground nutmeg and bake the pie in the oven for 35 minutes. You'll know the pie is done when you insert a knife into its center and it comes out clean! Once it's baked, let it cool completely on a wire rack before slicing.
